Healthy Easy Chili


I am a busy mom myself, eating healthy is SO important to me because effects food has on my body when I don't eat the right foods. But being healthy doesn't have to be hard, chili is one of my favorite go to dinners durning the week. Its easy meal prep, delicious and a family favorite. It makes great left overs and I pack up all the left over in pre-portioned sized containers for easy re-heating or to grab and go for lunches durning the week.

Ingredient List

Chili

1lb ground lean turkey

1/2 onion

1 green bell pepper

1 can kidney beans (or Black beans)

1 can corn

1 can low sodium diced tomatoes

1 can tomato paste

1 cup low sodium chicken broth

1 can green Chili (optional)

Cayenne pepper (optional)

Chili powder

Paprika

Cumin

Coconut oil

Pink Himalayian salt or Sea salt

Corn Bread

1 Box Trader Joe's Cornbread Mix

1/2 cup oil ( optional coconut oil)

3/4 cup milk (optional Almond milk)

1 egg

Step 1

Start by pre-heating your non-stick pan on medium to low heat and adding the coconut oil.

As you are waiting for your pan to heat up start chopping the garlic, onion and green pepper.

To make dinner go even fast I try to find pre-chopped onion and garlic, but fresh is always best.

Step 2

Sauté your garlic, onions, and coconut oil until they start to turn golden brown.

Step 3

Add in the turkey, start to break it apart into small pieces as it cooks.

Adding in all of your spices to the turkey meat mixing it in as you go. Go easy on the salt.

Step 4

Once there is almost no pink left in the turkey, add in the diced tomatoes, chicken broth, corn and kidney beans.

Mix together and bring to a simmer.

Step 5

Add in your tomato paste and green bell pepper. Bring to a simmer. Once it comes to a simmer, turn the heat down to low heat and cover. Let sit for 20 minutes.

Which is just enough time to make the corn bread!! I baked the corn bred muffins in the over at 350 for 20 minutes and they came out perfect.

Once the cornbread is finished top the chili with avocado and enjoy!!

You can also turn this into a crock pot options. Just do steps 1-3 and then stick everything in the crock pot together for 4-8 hours. You can come to a hot fresh dinner and all you have to do is make the cornbread or make it the night before.
